Back to the kitchen for a new year filled with new foods to try~
I have not done an installment of my cooking series in quite a bit, but Valentine’s Day is tomorrow so what better time to give a little meal inspiration than before date time?! I don’t have a date this year, so instead of showing you what I am cooking for someone else, I decided to show you something that my friend, Angie, and I made for ourselves!
I promise this isn’t going to be one of those posts that you have to scroll passed a full novel about my life to see, but to give some context, Angie and I have a private Pinterest board called Dinner Winners where we post up yummy looking recipes we want to try. And since I started trying to monitor my personal health and cut down on carbs, we went with this yummy keto-friendly dish by a blogger named Dear Crissy!
Ingredients
Serves 8
Meat
8 slices Bacon
Chicken Breast Cubed***
Produce
1 large head Cauliflower
6 tbsp Chives, fresh
Condiments
1/2 cup Mayonnaise
Baking & Spices
1/4 tsp Black pepper
1 tbsp Ranch seasoning
Dairy
1 cup Cheddar cheese, sharp
1 cup Colby & Monterrey jack cheese
1/2 cup Sour cream
The one change that Angie and I made from the original recipe is adding chicken (we also excluded chives just cause). This dish seemed to be more of a side dish than an actual meal so we wanted to give it a bit more substance. Plus, I think playing around and switching up recipes can really be a fun experience.
